Even though the weather is warm there is still snow on the mountain

Over in England... Little Tufty helped Mummy with laundry... in the cutest way possible

When MrD got home from work he put up the archway in the Victory Garden for our cucumbers to grow on

This year we used a cattle panel for extra strength

and its turned out really good

For dinner I tried out a new recipe.. Beef Bulgogi Stir Fry. It was delicious...and smelled amazing... so much so that my passing neighbour followed her nose... and took some home for her and her husband. Here's the recipe.... and our menu for the week.

Korean Beef Bulgogi Stir Fry

14 oz / 400 g thinly sliced beef , any good quality tender cut suitable for grilling
1 scallion/shallot stem , green and white part separated, both finely sliced
1/2 large onion (brown, yellow or white), peeled and thinly sliced
1/2 medium carrot, peeled, cut vertically then cut into thin slices on the diagonal

2 radish sliced
1 tbsp cooking oil 
1/2 tbsp sesame seeds (optional)

MARINADE

3 tbsp ordinary soy sauce (I use Kikkoman)
1 1/2 tbsp brown sugar
1 tsp apple cider vinegar 

1/2 tsp sugar
1/2 tbsp sesame oil
2 tbsp grated onion 
2 cloves garlic, minced
3 tbsp grated red apple (not green - they are too tart) 
1/2 tsp minced ginger
Black pepper

• Blot the beef dry using a paper towel then place into a bowl.
• Mix together the Marinade ingredients in a small bowl
• Add the beef. 
• Stir gently to coat the beef, cover with cling wrap 
• Set aside to marinate for at least 1 hour, preferably overnight.
• Heat the oil in a wok or large fry pan over high heat.
• Add the onion and white part of the scallion/shallots. Cook for 1 minute.
• Add the beef, including the Marinade, and carrots and radish 
• Cook for around 3 to 5 minutes, stirring constantly, until the beef is just cooked.
• Remove from heat, then toss through the sesame seeds.
• Serve immediately with rice

Sunday May 5th

After another uplifting Sunday church service... 

MrD and I took the opportunity and took the long way home. 

A drive in the countryside was just what I needed.. 

even though there wasnt too much to see

Little Tufty is feeling better today... and looks more like herself... even if  her poor mouth still hurts

Later we had an excited call from Little Miss. 

One of her Daddys birthday presents was a visit to the football ground of his favourite team... Newcastle United. 

He had two tickets so he took the football loving Little Miss

and to say she loved it is an understatement 

especially as she got to walk through the tunnel onto the pitch

Saturday May 4th

After a leisurely breakfast and a quick trip to the dog park.. we did some work in the back garden. First MrD mowed the lawn... just to keep it manageable as there is a lot of work to be done.

That done he started a new project. He has decided to run a water system to the Victory Garden, so that it can have its own tap and be on a separate sprinkler timer. He's full of these great ideas and Im grateful he loves "tinkering"

As for me... I just pottered

and enjoyed the flowers that are starting to bloom

I had a call from my daughter. Little Tufty is really suffering with her teething. She has eight...yes eight.. coming through at the same time. Its heartbreaking to see her in pain and her not understanding why... I feel helpless because there is not much I can do. Poor baby... hopefully she will feel better tomorrow

Friday May 3rd

Prince had a checkup at the vets. He is doing incredibly well.. 

he is healthy and happy... 

and didnt flinch when he got a couple of vaccinations

He did so well.. a trip to the park was called for on the way home..

He loves it... but I always feel that Im being watched..

either from above...

or down below...

When we got home MrD continued with cleaning up the garden...

Meanwhile in England...

Little Tufty wants to fill her big sisters shoes...

or should I say.. football boots

and as for my crazy grandson...

He walked into the living room... said "I'll be Back" and walked out again

He's nuts... just like his daddy...

and.. by the way..  has never seen "Terminator"

Thursday May 2nd

Its nesting season... and black crows think the eggs are easy pickings

but the little birds arent having it!! 

Its like Goliath and lots of little Davids!!

MrD is still keeping busy... even after a full days work

Hes moved all the jack hammered concrete

brushed up all the smaller pieces

and started moving the soil from the front yard.

He never stops and totally deserved the Chicken Alfredo I made for dinner

Little Tuftys hair is growing beautifully...

As is she.. and we get a glimpse of her future...

Daddy had better hide his credit card...

Wednesday May 1st

 The first day of a new month...

and half the garden is growing well..and looking relatively good..

but the other half...

Today MrD cut a nice straight line in the concrete...

jack hammered the rest..

and dug it all up.

Its looking a right mess...but a job well done!

and not caused by the 4.3 earthquake we had this afternoon

Tuesday April 30th

MrD leaves for work at 2am and this morning he took took the bike.

At home, our hanging baskets are starting to bloom

Filling the gazebo with beautiful colours

Meanwhile over in England, Little Miss is learning about The Creation in her RE class in school

so for homework.. she had to look for the beauty of it for herself.

Her wonder in His work was evident.. especially when finding a Ladybird 

and she described it for her teacher to see.

And talking of homework.... Little H had an assignment to find the most unusual place to read the English class assigned book. He choose half way up the wall...which makes him look like he's levitating

and finally.. Dinner tonight.... Chicken Frajitas..one of my faves...
